Lemon Meringue Pie? Close enough!

These meringues were in the oven for 2 hours on low heat. And then left in the oven over night to cool.

Underneath the meringue is a little parcel of lemon curd!

Yum! It's best eaten hot, when the parcel wrapper is crisp and the lemon curd is hot and ozzing out like lava! The meringue was good too! It had a soft chewy inside with a crisp outer layer. :) I'm happy with it!
