Lemon Meringue Pie? Close enough!


These meringues were in the oven for 2 hours on low heat. And then left in the oven over night to cool.
 

Underneath the meringue is a little parcel of lemon curd!

Yum! It's best eaten hot, when the parcel wrapper is crisp and the lemon curd is hot and ozzing out like lava! The meringue was good too! It had a soft chewy inside with a crisp outer layer. :) I'm happy with it!

Did I confuse you?! It's Korean style because I used sweet potato noodles instead of rice! :) It was delicious!

Ginger Spice Cookie Sticks

 

These are the first fruits of a cookie press which I received from a precious friend! Instead of making the regular cookie shapes, I wanted to make something that would be easier to dunk with! These cookie sticks are just perfect! The ginger spice flavors made it all like Christmas again! :) I can't wait to use my cookie press again! What kind of cookie should I make then?! hmmmm......

Sesame Salmon & Mash


My simple lunch today. A big portion of baked salmon with mashed potatoes. Have you tried freshly grated nutmeg with hot mashed potatoes? If not, you should! It's a yummy combo! And if you haven't figured yet, I have a thing with sesame seeds, I can never have too much of it!

Stuffed Pumpkin

 
 
 
 

So I received some pumpkins from a friend and wondered how I should make full use of them. I made pumpkin cutlets with one and with my second pumpkin, I made it Korean! :) Korean because it's stuff with black and white glutinous rice, red dates, goji berries, corn, and raisins! Cooked till perfect softness. It's naturally sweet and healthy! :) I love how beautiful it looks, that's always an added bonus!
