So I received some pumpkins from a friend and wondered how I should make full use of them. I made pumpkin cutlets with one and with my second pumpkin, I made it Korean! :) Korean because it's stuff with black and white glutinous rice, red dates, goji berries, corn, and raisins! Cooked till perfect softness. It's naturally sweet and healthy! :) I love how beautiful it looks, that's always an added bonus!

Stuffed Pumpkin

Roasted Eggplant & Garlic Dip
I wanted to try something new with my all time favorite eggplant! So I roasted 5 Chinese eggplants and one head of garlic for an hour. I took a nap and woke up to the aroma of roasted goodness! Excited, I got up and unwrapped the parcel to reveal this precious eggplant dip! It was perfect with some toasted pita bread! :) I will be making this more often!
Mango Ice Cream Cookie Sandwiches
I wanted to make a mango tart but the experiment some how ended with these ice cream cookie sandwiches! WOW! what a different product than what I had in mind! Nevertheless, they were good! The mango ice cream was very mango-y and I added crystalized ginger in there too! The cookies are just your regular vanilla cookies, but they made the whole house smell sooo yummy while they were baking away in the oven! :) Those two together made this BIG dessert a success!
